Los Chelazos is a blend of coffees from the cantons of Citala and La Palma, which are part of the Montecristo Trifinio. This national park is bordered by El Salvador, Guatemala and Honduras and is a protected reserve rich with bio-diversity.
The Los Chelazos project is the result of a group of small scale producers who pick and process their own coffee, in micro mills at each farm. A combination of farms, varietals and farming practices contribute result in a coffee full of complexity.
Origin: Citala & La Palma, Chalatenango
Altitude: 1500–1800 MASL
Varietal: Bourbon, Pacas, Catuai, Pacamara
Process: Fully Washed & Sun Dried
This coffee is sweet, full bodied and complex which makes it suited for all types of brewing methods.
You can make this one in any style. Flavor is just balanced overall. It gives you that great feeling when you take the first sip. And then you just want to keep going. Flavor is consistent batch after batch. Highly recommended.

Always delicious and smooth
I've loved every Cuveee roast I've tried so far, and El Salvador is no exception. Smooth and just plain delicious, this roast has just enough body to account for it's medium roast status, but still light enough to offer a nice caffeine kick. Since I started really getting into cold brew, I've found El Salvador is a perfect match for this and really holds up well even after a few days in the fridge!

Best Dark Roast
I'm a relatively new coffee drinker at 73 (my Dad must be laughing now, he drank at least two quarts of coffee every day working on the Railroad). As a weight loss regimen to fight diabetes, eating just two high protein & fat meals no more than 6 hours apart (it works, off insulin,one hundred pounds lighter) I needed something in the morning....Hot, Black, Dark Roast Coffee turned out to be the answer...along with a nice morning cigar. My Coffe rig is a Fellows electric grinder and the new Aeropress Premium Glass and Metal brewing set. My early favorites were from Black & White and Graffeo Roasters. Cuvee is a new competitor to me (although Austin is only a modest drive from my Dallas home). I had to fiddle with the brewing, dropping the water temperature down to 94C from 99C. Going to a finer grind than I was accustomed to (Aeropress is 3-fine to 6-medium). I ended up with a setting of 3.25 fine/medium. Delicious coffee.....I brew two loads, 18 ounces and sit on the shaded back porch at 7 am and enjoy really great coffee, a good cigar, and a pleasant breeze (short lived in summer, but 77 degrees beats the rest of the day).
