This limited release black honey comes from the Brumas del Zurqui micromill in Costa Rica's Central Valley. Sweet with a silky body, citrus notes of orange and chocolate finish. Honeyed coffees often have the best of both worlds with bright acidity, full body and lots of sweetness which makes them really great for all brewing methods and exceptional as espresso.

Machines called aqua-pulpers are common in Costa Rica. They use pressurized water to strip away the mucilage - the sticky substance surrounding the coffee bean - leaving selective amounts to dry on the bean. When all the pulp is removed the coffee is fully washed. When a small amount of pulp is left it is called yellow honey. A little more pulp is red honey and a lot of pulp is called black honey.
