THE WITNESS PROJECT IS INTENDED to highlight the hard work of coffee farmers and producers that brings forth complex and unique flavors in relatively small geographic areas. This seasons coffee allows us to showcase not only that complexity, but also two farmers with whom we have some of our longest and deepest relationships. Luis Pedro Zelaya (Hunapu), and Guillermo Sanchez (San Jose Ocana) have been integral partners, growing and processing some of the most beautiful coffees we’ve ever come across. And now, we get to put their hard works together and present them to you.
“HUNAPU” IS THE CACKCHIQUEL WORD (the historical language of the Antigua region) for Volcano de Agua, the volcano that the farms are gathered around. Luis is a fourth-generation coffee producer committed to quality coffee by ecologically stable and environmentally friendly methods. Together, Luis and the farmers continue to support and uplift their community by focusing on a quality of work and a quality of life that we are proud to be a part of.
AS A CONFIRMATION OF THE SAN JOSE OCANA’S GREAT CUP QUALITY, it was featured in the April 2012 issue of Wine Spectator, won #2 spot in the 2007 Guatemala Cup of Excellence, and hasn’t had any extra coffee to enter the competition since. Only picking ripe cherries and then meticulously sorting the coffee before it enters the wet mill is but one example of the tight quality control system. Add to that diligent care of the trees and land, weed control with machetes, and one of the best dry mills in Central America, and you have a recipe for delicious coffee.
